These products include flour, starches, sweeteners, fats and oils, egg products, milk ingredients, cocoa, yeast, enzymes, emulsifiers, leavening agents, flavorings, colors, fillings, toppings, preservatives and bakery improvers. Bakery mixes and ingredient systems for the preparation of bread, ordinary bakery products and fine bakery products are included in the Codex definitions.

Major ingredients used in bakery foods

Flour is a main bakery ingredient, as it forms the major part of structure of bread and other baked products. The other ingredients are chosen based on the required texture, volume, flavor, color, freshness and shelf life. Some functional ingredients like enzymes, emulsifiers and leavening agents may affect dough performance and properties of final product. Codex' food category definition system contains specific provisions for ingredients and additives used in bakery products.

Bakery ingredient uses

Ingredients used in bakery products control dough formation, fermentation, aeration, moisture, softness, crispness, flavor, color, volume and shelf-life of the product.

How can enzymes in bakeries be used?

Enzymes in bakeries can be used to affect dough behavior, loaf volume, crumb structure, softness, and freshness. The use of enzymes depends on the type of enzyme and characteristics of the product. Enzymes are defined as food additives within an international food additive and bakery ingredient classification system, including Codex standards for bakery applications.

How can emulsifiers in bakeries be used?

Emulsifiers can assist in managing reactions between non-compatible components and help to provide dough stability, aeration, and texture and product consistency. FDA states that food ingredients and additives can have technological functions, including texture and consistency improvement, depending on the safety and other regulatory aspects.

What are bakery improvers?

Bakery improvers are functional ingredient blends which aim to enhance the processability and product qualities. They can include enzyme, emulsifier, oxidizing/reducing agent, and other functional ingredients. In 2025, Puratos brought out its Cubease bakery improver as a concentrated formulation which was aimed at facilitating dosing and enhancing operational efficiency.
