Dairy Enzymes Market Insights & Industry Trends 2026

What are dairy enzymes?

Dairy enzymes are enzymes used in the manufacture and processing of milk, cheese, yogurt, whey and other dairy products. Dairy enzymes are involved in the biochemical reaction that involves lactose, proteins and fats. The major dairy enzymes include lactase, chymosin, rennet, lipase, protease and lactase enzyme preparations. FAO/JECFA evaluates enzyme preparations derived from animals, plants and microbes based on their specific enzyme activity.

What are the uses of dairy enzymes?

Dairy enzymes are employed to alter the composition of milk and achieve specific processes. Lactase is involved in the breakdown of lactose to glucose and galactose, and rennet and chymosin in coagulation of milk in cheese production. Lipases may be used in cheese flavor development, and there are enzymes which are used in modifying proteins and other dairy components. FDA classifies enzyme preparations, lactase, papain, rennet and chymosin as ingredients used in cheese and dairy products.

What are the major types of dairy enzymes?

The main types are lactase, chymosin, rennet, lipase, protease and others. Lactase enzymes have the greatest use in the process of lactose hydrolysis and lactose reduced dairy products. Chymosin and rennet enzymes are milk clotting enzymes used in cheese manufacture.

How is lactase used in the production of dairy products?

Lactase helps in breaking down lactose into glucose and galactose, and it is hence used in the production of lactose-free or reduced dairy products. According to FDA records, lactase preparations used in the hydrolysis of lactose from milk are those derived from Candida pseudotropicalis and Kluyveromyces lactis. Recent lactase enzyme preparations derived from Aspergillus oryzae are also found on FDA's GRAS list.

How is chymosin used in cheese production?

Chymosin is a milk-clotting enzyme which helps in clotting milk during the process of cheese production. Chymosin acts as the critical enzyme in the conversion of milk into curd for the separation of curds from whey. Chymosin preparations from microbial sources are specified by FAO/JECFA, while FDA records include chymosin preparations for cheese from both animal and microbial sources.

What is the difference between rennet and chymosin?

Rennet is generally defined as milk-coagulating preparations while chymosin is a milk-clotting enzyme. Traditionally, rennet consists of enzymes from animals while cheese-making involves chymosin from both microbial and fermentation processes. Rennet from animal sources and chymosin enzyme preparations from Escherichia coli K-12, Kluyveromyces marxianus and Aspergillus niger are listed by FDA.
