The Strawberry Powder Market is linked to the larger strawberry processing and ingredient sector, which involves the transformation of strawberries into stable shelf-ingredients for usage in foods, beverages, bakery products, candies, dairy, nutrition products, and other formulations. Agricultural data on production, harvest area, and yield per hectare of strawberries are available via official sources like FAOSTAT and provide the first-hand evidence for the underlying supply of the raw material as opposed to market research estimates.

What is strawberry powder?

Strawberry powder is a dried strawberry ingredient obtained through processing strawberries and removal of the majority of their moisture content before milling or further processing. Based on the manufacturing process utilized, the final ingredient can be used in food and beverage formulations to deliver strawberry taste, smell, color, and fruit solids. FDA's records indicate Fragaria x ananassa fruit powder as an ingredient substance obtained from strawberries.

How is strawberry powder made?

Producers usually start with washed and sorted strawberries, followed by a drying process that includes freeze-drying, spray-drying, or other dehydration techniques. The dried material can then be ground into powder and sieved for size consistency. The final characteristics of the product are determined based on the processing conditions.

Where can strawberry powder be applied?

Strawberry powder can be used in smoothies, beverages, bakery items, confections, desserts, dairy products, ice creams, sauces, fillings, snacks, and powdered drinks. The product can deliver concentrated strawberry character without the requirement to include fresh strawberries in the end-product formulation. There are many applications of strawberries, which are processed into preserves, jellies, ice cream bases, syrups, and fillings.

Why is there an increase in the demand for strawberry powder?

The reason for higher demand is related to the need for shelf-stable fruits that are easy to incorporate into manufactured food products on a consistent basis during all seasons. Strawberries are a seasonal and geographically localized product. Drying makes it possible to process fresh strawberries into a more shelf-stable, transportable, portionable, and formulatable ingredient. According to the USDA statistics, the scope and international dimensions of the supply of strawberries are quite significant – in 2025 U.S. fresh strawberry imports achieved the record high of 590 million pounds, with 98% coming from Mexico.

Which industries use strawberry powder?

They include manufacturers of foods and beverages, bakeries, confectioneries, dairy and frozen-dessert makers, manufacturers of nutritional products, ingredient suppliers, and foodservice companies. Application requirements vary greatly.
